Massimo Livan, Executive chef of Antinoo's Lounge & Restaurant since its opening, is a bona fide Venetian and serves cuisine with a contemporary twist reflecting the setting of the restaurant.
He draws inspiration from the art, history, painting and infinite beauty of a city such as Venice. His dishes resemble colour palettes, finely and carefully chosen to form gastronomic creations.
He says that he is passionate about colourful cuisine and that creating a dish is much like putting paint to a canvas. Livan believes that food is an endless source of creative inspiration, where the various elements can be manipulated and interpreted as a form of expression.
He has a passion for creating design-led dishes but shies away from the idea that he is a food designer. His cuisine is creative yet light, colourful and mainly Mediterranean. He puts a great deal of care in to choosing and combining the ingredients.
